I made chili cheese dip with the left over chili and velveeta... it was ok, I forgot that I really don't like velveeta lol.

Here are some neat Easter breakfast ideas.

Spring Quiche

    Pre-Made Pie Crust
½ Cup Chopped Yellow Onion, Sautéed
1 Cup Frozen Chopped Spinach, Thawed and Drained
    6 Eggs
    1 Cup Milk
    2 Cups Shredded Cheese

Gather your ingredients and preheat the oven to 375°F.
Using both hands, mold the foil pie pan into a shamrock shape
Press pie crust into the bottom of the foil pan.
Pre-bake the pie crust for eight minutes and set aside.
In a medium mixing bowl, whisk together eggs and milk.
Spread shredded cheese in the bottom of your pie crust.
Layer the spinach and onions on top of the cheese.
Pour the egg and milk mixture evenly over the spinach.
Bake for 35 minutes or until the egg mixture sets.
Allow the quiche to cool for 5-10 minutes, slice, and serve warm.

Cheesy Egg Bites

    12 Eggs
    16-oz. bag of Frozen Broccoli
    1-Cup Shredded Cheddar Cheese

Allow bag of frozen broccoli to defrost at room temperature for 20-30 minutes.
Preheat oven to 325° and prepare a muffin tin with nonstick spray.
Crack all 12 eggs into a medium-sized mixing bowl. Beat eggs with a fork or whisk.
Stir the broccoli and shredded cheese into the egg mixture.
Using a small ladle, spoon the egg and broccoli mixture into each muffin cup, about ¾ full.
Bake for 12-15 minutes, or until each egg bite is firm.
Remove each egg bite from the tin and allow them to cool on a wire rack.
Enjoy warm immediately or store in the refrigerator for up to four days. Reheat in the microwave.

Turkey chili was on the menu last night.  We didn't have any chili powder, so we used a can of Del-Monte sloppy joe sauce instead.  It actually turned out great!

That all sounds interesting.  I think the only thing I could go for would be the stuffed clams...  Possibly the octopus.  I'm sure it was good though!
